rice vermicelli

black Chinese mushrooms, soaked in water till soft

canned button mushrooms

lettuce leaves

water convolvulus (kangkong)

 

fresh red chilies

vinegar

salt

piece ginger

castor sugar

clove garlic

lime juice

 

chicken stock

oil

stalks spring onions

sesame oil

white pepper

chicken soup

thin soy sauce

salt

ginger

Method :
  1. Boil stock in a large pot.

  2. Add chicken cubes, ginger, sesame oil, cooking oil and thin soy sauce.

  3. When water boils, add pepper and salt.

  4. Pour into steamboat.

  5. Make the sauce: Grind together the chilies, ginger and garlic.

  6. Mix well with vinegar, salt and castor sugar.

  7. Squeeze in lime juice.

  8. To eat, each person dips the food of his or her choice into the boiling soup.

  9. When the food is cooked, it is then dipped into the chili sauce.

  10. If the steamboat equipment is not available, you can also use an electric rice cooker in which to boil the soup.
