Steamed Clams With Garlic Sauce Recipes

Ingredients :

8 large clams

1 1/2 tbsp grated garlic

3 cloves garlic (crushed)

1 tbsp fermented black beans

red chili shreds

spring onion shreds

Sauce :

boiling garlic oil (made by stir frying garlic with 1 tbsp of oil over low heat)

light soy sauce

pepper

Seasoning :

1/2 tsp salt

1/2 tsp light soy sauce

1/2 tsp sugar

1 tsp grated shallot

pinch of pepper

Method :
  1. Wash and crush fermented black beans.
  2. Stir fry grated garlic and fermented black beans with 1/2 tbsp of oil until fragrant.
  3. Stir in seasoning.
  4. Allow to cool and set aside.
  5. Remove one of the shells of each calm.
  6. Rub with coarse salt and remove innards.
  7. Drain well.
  8. Arrange clams on serving plate.
  9. Put grated garlic and fermented black beans on top.
  10. Steam over high heat for 8 minutes.
  11. Drain liquid from steaming clams.
  12. Add red chili and spring onion.
  13. Pour sauce on top.
  14. Serve hot.
