Green Papaya Salad Recipes

Ingredients :

1/3 cup peanuts

1 small, firm papaya, seeded and grated

1 carambola (star fruit), thinly sliced crosswise

1/2 Asian pear, cored and cut into bite-sized pieces

2 Italian tomatoes, seeded and diced

3 tbsp fresh lime juice

1 small hot red chili, seeded and thinly sliced

1 shallot, finely sliced

1 tbsp fish sauce

3-4 tbsp whole cilantro leaves

Method :

Roast peanuts in a 350F oven for 10 minutes. Cool, rub off skins, chop coarsely, and set aside.

In a glass serving bowl, lightly toss grated papaya, carambola, and tomatoes with the lime juice.

Add chili, scallions, and fish sauce and toss again. Sprinkle with chopped peanuts and decorate with whole cilantro leaves.

Serves 4
