Shrimp in Spicy Bean Sauce Recipes

Ingredients :

12 oz fresh shrimp, peeled and deveined

1/2 tsp salt

1/2 tsp freshly grated ginger

1 garlic clove, finely minced

1 tbsp Chinese rice wine

1 fresh red chili pepper

1 fresh tiny green chili pepper

1 tbsp fermented black beans

1-2 tsp Chinese chili and garlic sauce

2 tsp hoisin sauce

2 tbsp peanut oil

2 scallions, sliced

2 tbsp fresh cilantro leaves

Method :

Shell shrimp and mix thoroughly with the garlic, salt, ginger and rice wine. Marinate for 30 minutes. Seed chili peppers and sliced finely. Rinse black beans, chop them coarsely, and mix them with chili sauce and hoisin sauce.

Heat 1.5 tbsp of oil in wok and stir-fry chili peppers for a second or two - do not let them burn - add shrimp with marinade and stir-fry for 2-3 minutes, or until shrimp are pink and opaque.

Add remaining oil and black bean mixture, stir-fry, coating the shrimp well with the sauce, for about 30 seconds longer. Serve immediately garnished with cilantro leaves and scallions.
