Method :
Shell shrimp and mix thoroughly with the garlic, salt, ginger and
rice wine. Marinate for 30 minutes. Seed chili peppers and sliced
finely. Rinse black beans, chop them coarsely, and mix them with chili sauce and hoisin sauce.
Heat 1.5 tbsp of oil in wok and
stir-fry chili peppers for a second or two - do not let them burn -
add shrimp with marinade and stir-fry for 2-3 minutes, or until
shrimp are pink and opaque.
Add remaining oil and black bean
mixture, stir-fry, coating the shrimp well with the sauce, for about
30 seconds longer. Serve immediately garnished with cilantro leaves
and scallions.
