Celeriac and Orange Soup Recipes

Ingredients : |
1 celeriac (375g), peeled and roughly
chopped
1 potato, peeled and roughly chopped
2 carrots, sliced
1 liter chicken stock
thinly pared rind of 1/2 orange
1 tsp grated orange rind
1 tbsp orange juice
salt and pepper
single cream, to garnish |
Method :

Put the celeriac, potato and carrots
into a saucepan with the stock and bring to boil.

Cover the pan, lower the heat, simmer
30 minutes, until all vegetables are soft.

Cut the orange rind into very thin
matchstick strips.

Place in saucepan with little boiling
water and boil for 10 minutes, drain.

Reserve for garnish.

Cool the vegetables and stock
slightly, transfer to food processor and process to a smooth puree.

Return the puree to the rinsed pan,
add grated orange rind and juice and season with salt and pepper to
taste, simmer 5 minutes.

Soup is ready to serve with swirl of
cream or crème fraiche.
