Country Soup Recipes

Ingredients :

2 tbsp butter

2 tbsp water

1/2 cup fresh green beans, cut on diagonal

2 medium carrots, sliced thin

2 cups small thin slices turnip

2 leeks, sliced paper thin (white part only)

1/2 cup finely chopped celery

1/2 cup water

1/2 cup fresh or frozen peas

2 cups finely shredded green cabbage

1 1/2 tsp salt

1/4 tsp pepper

1/2 tsp paprika

4 cups milk

1/2 cup shredded lettuce

2 tsp chopped fresh dill

Method :

Heat butter in large saucepan. Add 2 tbsp (30 ml) water and beans. Cover and cook over high heat 3 minutes, shaking pan often. Add carrots, turnip, leeks, celery and 1/2 cup (125ml) water. Cover and cook about 7 minutes or until vegetables are nearly tender. Add peas and simmer 5 minutes.

Add cabbage, salt, pepper, paprika and milk. Simmer 5 minutes. Stir in lettuce and heat. Ladle into bowls and sprinkle with dill.

Serves 4 - 6
