Courgette and Yogurt Soup Recipes

Ingredients :

50g butter

1 onion, chopped

500g courgettes, cut into 5mm

900ml chicken stock

1 mint sprig

salt and pepper

150ml natural yogurt, extra to garnish

brown bread and butter, to serve (optional)

Method :
  1. Melt the butter in saucepan, add onion, courgettes, fry gently for 5 minutes.

  2. Add the stock and mint and season to taste with salt and pepper.

  3. Boil, lower the heat, cover, simmer 20-30 minutes, until courgettes are soft.

  4. Reserve a few courgette slices to garnish and transfer the soup to a food processor and process to a puree.

  5. Transfer the soup to a bowl, stir in yogurt, chill for 3 hours.

  6. Soup is ready with the reserved courgette slices and the extra yogurt, thin slices of brown bread and butter (if preferred).

Serves 5
