Creamy Corn and Chicken Chowder Recipes

Ingredients : |
25g butter
1 large onion, chopped
1 small red pepper, cored, deseeded, diced
625g potatoes, peeled and diced
25g plain flour
750ml Chicken stock
175g frozen sweetcorn, thawed
250g cooked chicken, diced
450ml milk
1/2 tsp salt
freshly ground white pepper
3 tbsp chopped parsley
crusty bread, to serve |
Method :

Melt the butter in a large saucepan.

Add onions, red pepper and potatoes
and fry over a moderate heat for 5 minutes, stir.

Sprinkle in the flour and cook over
low heat for 1 minute.

Stir in the stock and bring to boil,
lower the heat, cover, cook 10 minutes.

Stir in the sweetcorn, chicken, milk,
salt, pepper and parsley, cover, simmer for 10 minutes until
potatoes are just tender.

Taste and adjust the seasoning.

The chowder is ready to serve with
crusty bread
