Double Melon Soup Recipes

Ingredients :

2 tablespoons

1 teaspoon

2 tablespoons

1/2 ripe

2 tablespoons

3 tablespoons

small, ripe cantaloupe melon, peeled, seeded and chopped

orange juice

grated orange rind

sweet sherry

honeydew melon, peeled, seeded and chopped

lemon juice

chopped mint

mint sprigs, to garnish

Method :
  1. Liquidize the cantaloupe melon with the orange juice and rind and the sherry, cover and chill for at least 3 hours.

  2. Liquidize the honeydew melon with the lemon juice and mint, cover and chill for at least 3 hours.

  3. Pour equal amounts of each melon mixture into chilled serving bowls for a pretty half orange, half green effect.

  4. Garnish with mint sprigs and serve chilled.

Serves 6
