Frosted Yogurt Soup Recipes

Ingredients :

225 g

2 tablespoons

575 ml

lemon juice

plain low fat Yogurt, chilled

small cucumber, finely chopped

cider vinegar

chopped mint

mint sprigs, to garnish

salt and pepper

Method :
  1. Reserve 2 large strawberries for decoration.

  2. Mash the rest with the lemon juice and stir into half the Yogurt.

  3. Mix the cucumber, vinegar and mint into the remaining Yogurt and season with salt and pepper.

  4. In 4 flat serving dishes swirl portions of the strawberry and the cucumber mixtures to make fondant colored sections.

  5. Don't over do it and stir the whole lot together !

  6. Cut the reserved strawberries in half.

  7. Garnish each bowl with a half strawberry and mint sprig.

  8. Serve chilled.
