Iced Orange and Avocado Soup Recipes

Ingredients :




275 ml


150 ml

150 ml


small onion, finely chopped

garlic clove, chopped

chicken stock


plain low fat yoghurt

frozen concentrated orange juice, thawed

salt and pepper

Method :
  1. Halve and stone the avocado and scoop out the flesh.

  2. Simmer it for 5 minutes with the onion and garlic in the stock.

  3. Very thinly pare the orange find and cut it into fine shreds.

  4. Reserve for garnish.

  5. Peel the oranges and discard the seeds.

  6. Liquidize the orange flesh with the avocado and stock.

  7. Season well with salt and pepper.

  8. Cool.

  9. Beat the avocado mixture with the yoghurt and orange juice and whisk well.

  10. Chill.

  11. Garnish with the orange strips to serve.

Serves 4
