Iced Vegetable Soup Recipes

Ingredients :

Garnish :

canned tomatoes, puréed

white stock

whole meal breadcrumbs

red wine vinegar

olive oil

dry white wine

green pepper, thinly sliced

red pepper, thinly sliced

large onion, finely chopped

cloves garlic, crushed

small cucumber, diced

chopped parsley

salt and ground black pepper

garlic croutons or sunflower seeds, both optional

Method :
  1. Mix the tomato puree with the white stock and stir in the breadcrumbs, vinegar, olive oil and wine.

  2. Stir in the vegetables and parsley and season will with salt and pepper.

  3. Chill in a covered container for at least 2 hours, or overnight.

  4. Serve in chilled bowls garnished with garlic croutons or sunflower seeds if liked.

Serves 4

Per Serving : 5 g fat, 4 g fiber.
