Ingredients :
1 ham shank, weighing 500g-1kg
175g split red lentils, rinsed
2 large onions, finely diced
2 large carrots, finely diced
175g turnip, finely diced
500g potatoes, finely diced
3 tbsp finely chopped parsley
salt and pepper
Rinse the ham shank in cold water, put into a saucepan, cover with water.
Bring to boil, pour off this water and rinse the pan.
Add 2.5 liter fresh cold water to the pan.
Add the lentils, onions, carrots and turnip, bring to boil, reduce the heat, simmer for 90 minutes.
Add potatoes and cook for 30 minutes until the meat is tender and the broth rich and thick.
Remove the ham from broth, peel off the skin, cut the meat into small cubes.
Return to the broth, season to taste with salt and pepper.
Stir in parsley.
Ready to serve.
