mushrooms, thinly
tomatoes, skinned and quartered

Method :

Bring the stock to the boil in a
large pan and add the pasta and celery.

Return to the boil, cover and
simmer for about 13 minutes, or until the pasta is tender.

Add the mushrooms and tomatoes,
season with salt and pepper and simmer for 2 minutes.

Sprinkle with the chopped mint just
before serving.
