Pasta and Mushroom Soup Recipes

Ingredients :

850 ml

Garnish :

15 ml

pints brown stock

whole meal pasta shapes

stalks celery, thinly sliced

mushrooms, thinly

tomatoes, skinned and quartered

salt and ground black pepper


chopped mint

Method :
  1. Bring the stock to the boil in a large pan and add the pasta and celery.

  2. Return to the boil, cover and simmer for about 13 minutes, or until the pasta is tender.

  3. Add the mushrooms and tomatoes, season with salt and pepper and simmer for 2 minutes.

  4. Sprinkle with the chopped mint just before serving.

Serves 4

Per Serving : negligible fat, 3 g fiber.
