Pearly Barley Soup Recipes

Ingredients :

75 g

1.4 liters






Garnish :

15 ml

pearl barley, soaked and drained

white or vegetable stock

bay leaf

large onion, sliced

medium sized carrots, diced

medium sized potatoes, diced

salt and ground black pepper


chopped dill or parsley

Method :
  1. Simmer the pearl barley, with the bay leaf, in the stock in a large covered pan for 11/2 hours.

  2. Add the vegetables, season with salt and pepper and simmer for 30 minutes.

  3. Remove the bay leaf.

  4. Serve garnished with the dill or parsley.

Serves 4

Per Serving : negligible fat, 3 g fiber.
