Red Lentil Soup Recipes

Ingredients :

4 streaky bacon rashers, rinded and diced

1 onion, sliced

125g celeriac, peeled and chopped

125g red lentils, washed and drained

1.2 liters chicken stock

1/2 tsp dried mixed herbs

salt and pepper

croutons, to serve

Method :
  1. Place the bacon in saucepan, heat gently until the fat runs.

  2. Add onion, fry gently for 5 minutes until softened.

  3. Add celeriac, stir to mix.

  4. Stir in the lentils, stock, herbs, season with salt and pepper to taste.

  5. Bring to boil, lower the heat, simmer 45-60 minutes, until lentils are tender.

  6. Transfer the soup to a food processor, process to a smooth puree.

  7. Return the soup to the rinsed pan, heat gently and adjust seasoning to taste.

  8. Ready to serve with croutons.
