Red Lentil Soup Recipes

Ingredients : |
4 streaky bacon rashers, rinded and diced
1 onion, sliced
125g celeriac, peeled and chopped
125g red lentils, washed and drained
1.2 liters chicken stock
1/2 tsp dried mixed herbs
salt and pepper
croutons, to serve |
Method :

Place the bacon in saucepan, heat
gently until the fat runs.

Add onion, fry gently for 5 minutes
until softened.

Add celeriac, stir to mix.

Stir in the lentils, stock, herbs,
season with salt and pepper to taste.

Bring to boil, lower the heat, simmer
45-60 minutes, until lentils are tender.

Transfer the soup to a food processor,
process to a smooth puree.

Return the soup to the rinsed pan,
heat gently and adjust seasoning to taste.

Ready to serve with croutons.
