Soya Bean and Leek Soup Recipes

Garnish :
15 ml |
soya beans, soaked and drained
small onion
cloves
bay leaf
large carrots, diced
small leeks, sliced
brown stock
salt and ground black pepper
chopped chives |
Method :

Simmer the beans in a large covered
pan, with the onion stuck with the cloves and the bay leaf, for 21/2
hours.

Drain and discard the liquid and
other vegetables.

Return the beans to the rinsed pan
with the carrots, leeks and stock and bring to the boil.

Simmer for 1 hour, or until the
beans are tender.

Season with salt and pepper and
serve garnished with chives.
Serves 4
