Soya Bean and Leek Soup Recipes

Ingredients :

100 g






1.1 liter


Garnish :

15 ml

soya beans, soaked and drained

small onion


bay leaf

large carrots, diced

small leeks, sliced

brown stock

salt and ground black pepper


chopped chives

Method :
  1. Simmer the beans in a large covered pan, with the onion stuck with the cloves and the bay leaf, for 21/2 hours.

  2. Drain and discard the liquid and other vegetables.

  3. Return the beans to the rinsed pan with the carrots, leeks and stock and bring to the boil.

  4. Simmer for 1 hour, or until the beans are tender.

  5. Season with salt and pepper and serve garnished with chives.

Serves 4

Per Serving : 5 g fat, 3 g fiber.
