Spiced Lentil Soup Recipes

lentils, washed and drained
large
onion, sliced
bay leaf
stalks
celery, thinly sliced
brown
stock
ground
turmeric
ground
ginger
salt and
ground black pepper
a few herb
croutons
or a little All-Bran (Garnish) |
Method :

Simmer the lentils, onion, bay
leaf, celery and stock in a large, covered pan for 30-40 minutes
until the lentils are soft.

Discard the bay leaf.

Stir in the turmeric and ginger, season with salt
and pepper and beat with a wooden spoon.

This soup has a rough texture, but if a smoother
one is required, liquidize in a blender, puree in a food mill or
pass through a sieve.

Just before serving, add a very few herb croutons,
or a little All-Bran.
Serves 4
Per Serving : negligible fat, 7 g fiber.
