Ingredients :

green split peas
water
pig's trotters (optional)
piece fat ham or bacon bones
leeks, thinly sliced
medium-sized potatoes, peeled and diced
stalk celery, chopped
Soak peas in enough water to cover overnight.
Drain well.
Place in a large pan with the water, pigs' trotters and ham or bacon bones.
Bring to boil.
Reduce heat and simmer slowly for 3 hours.
Add leeks, potatoes and celery.
Simmer for another 30 minutes, stirring occasionally.
Discard the pigs' trotters.
Remove the ham and bacon bones.
Serve with hot crusty bread.
