Tomato Soup Recipes

Ingredients :

2 oz


1 lb

1.5 pints

1 oz

1.5 oz

5 fl oz

1 tsp

ham or bacon, cut into small pieces

onion, chopped

tomatoes, cut into squares

pints stock

butter or margarine

plain flour



salt and pepper

Method :
  1. Place the bacon and onion in a pan and sauté over low heat for about 15 minutes.
  2. Add the tomatoes, stock and salt and pepper.
  3. Bring to the boil and simmer until the vegetables are tender.
  4. Rub the mixture through a sieve or puree in a blender or food processor.
  5. Melt the butter in the soup pan, add the flour and cook for 1 minute.
  6. Gradually stir in the milk.
  7. Add the puree and sugar.
  8. Bring to the boil and boil for 2-3 minutes.
  9. Serve the soup with toast or fried bread.
