500g spaghetti
30g butter
4 spring onions, finely chopped
4 slices leg ham (375g), cut in strips
1.25 cups cream
3 eggs, lightly beaten
1/2 cup freshly grated Parmesan cheese
1 tsp ground pepper
2 tbsp finely chopped fresh chives or
parsley |
Method :
Cook the pasta
in a large pan of rapidly boiling water with a little oil added until just
tender; drain. Return pan to heat, add butter. Add spring onions and ham.
Cook, stirring, 2 minutes. Stir in cream; bring to boil. Reduce heat;
simmer, uncovered, 2 minutes. Add beaten eggs, cheese and pepper; mix
well. Return pasta to pan. Cook, stirring, over low heat 2 minutes until
heated through. Serve immediately, garnished with chives or parsley.
Serves 4-6
