Spaghetti Primavera Recipes

Ingredients :

500 g

1 cup

200 g

155 g

30 g

220 ml

60 g

spaghetti

frozen broad beans

sugar

asparagus

butter

cream

freshly grated Parmesan

snap peas, trimmed

Method :
  1. Cook the spaghetti in a large pan of rapidly boiling water until just tender.
  2. Drain and return to the pan to keep warm.
  3. Cook the beans in a pan of boiling water for 2 minutes.
  4. Plunge into iced water, drain and remove the skins.
  5. Cook the peas in boiling water for 2 minutes; plunge into iced water then drain.
  6. Remove the woody ends from the asparagus and cut into short pieces.
  7. Cook in a pan of boiling water for 2 minutes, or until bright green and tender.
  8. Plunge into iced water; drain.
  9. Melt the butter in a heavy based frying pan.
  10. Add the vegetables, cream and Parmesan.
  11. Simmer for 2 minutes, or until heated through; season to taste.
  12. Pour the sauce over the pasta and toss to combine.

Serves 4 - 6

Preparation : 20 minutes

Cooking : 15 minutes
