Method :
- Cook the spaghetti in a large pan
of rapidly boiling water until just tender.
- Drain and return to the pan to
keep warm.
- Cook the beans in a pan of boiling
water for 2 minutes.
- Plunge into iced water, drain and
remove the skins.
- Cook the peas in boiling water for
2 minutes; plunge into iced water then drain.
- Remove the woody ends from the
asparagus and cut into short pieces.
- Cook in a pan of boiling water for
2 minutes, or until bright green and tender.
- Plunge into iced water; drain.
- Melt the butter in a heavy based
frying pan.
- Add the vegetables, cream and
Parmesan.
- Simmer for 2 minutes, or until
heated through; season to taste.
- Pour the sauce over the pasta and
toss to combine.
