Spaghetti With Mushroom and Walnut Sauce Recipes

Ingredients :

whole meal spaghetti

vegetable oil

large onion, sliced

cloves garlic, crushed

tomatoes, skinned and sliced

mushrooms, sliced

walnuts, roughly chopped

chopped parsley

ground black pepper

salt

black olives (garnish)

Method :

Cook the spaghetti in a large pan in plenty of boiling salted water for about 12-13 minutes, or according to the directions on the packet, until just tender. Drain and keep warm. Meanwhile, heat the oil in a large pan, add the onion and garlic and fry over moderate heat for 3-4 minutes. Add the slices tomatoes and mushrooms, stir well and cover the pan. Simmer gently for about 10 minutes, shaking the pan occasionally. Add the walnuts and parsley and season with pepper. Simmer for a further 2-3 minutes. Pour the sauce over the spaghetti and toss well, using 2 forks. Serve very hot, garnished with the olives.

Serves 6
