Toppings for Steak:
Herbal Butter: Blend a couple of
tablespoons of chopped fresh parsley and chives with a couple of
tablespoons of softened butter and a teaspoon of lemon juice. Add half a
clove of minced garlic, if desired.
Red Wine Sauce: Add 1/4 cup red
wine and 2 tablespoons of butter to the pan juices after removing the
steaks. Pour any liquid from the steaks as they rest back into the pan
and season strongly with black pepper. Drizzle over the steak just
before serving.
Bleu Cheese Sauce: Blend 2
tablespoons of crumbled bleu cheese with 1/4 cup of sour cream and a
tablespoon of lemon juice.
