Method :
- Remove hard string from asparagus.
- Parboil with ginger and spring
onion for a while.
- Remove, rinse and wipe dry.
- Wash, pat dry and mash shrimps.
- Mix with seasoning.
- Stir hard in one direction.
- Then chill for at least 2 hours.
- Dab asparagus with pinch of
caltrop starch and place shrimps on top.
- Steam over high heat for 8
minutes.
- Remove.
- Drain liquid form steaming
asparagus.
- Pour boiling oil over asparagus.
- Serve with dipping sauce.
