Asparagus and Shrimps Recipes

Ingredients :

8 fresh asparagus

375 g shrimps (shelled)

ginger

spring onion

Dipping Sauce :

boiling oil

shrimp paste

Seasoning :

1 1/4 tsp salt

1/3 tsp sugar

2 tsp caltrop starch

1/3 egg white

pinch of pepper

pinch of finely chopped water chestnut

1 tbsp cooked fat pork

Method :
  1. Remove hard string from asparagus.
  2. Parboil with ginger and spring onion for a while.
  3. Remove, rinse and wipe dry.
  4. Wash, pat dry and mash shrimps.
  5. Mix with seasoning.
  6. Stir hard in one direction.
  7. Then chill for at least 2 hours.
  8. Dab asparagus with pinch of caltrop starch and place shrimps on top.
  9. Steam over high heat for 8 minutes.
  10. Remove.
  11. Drain liquid form steaming asparagus.
  12. Pour boiling oil over asparagus.
  13. Serve with dipping sauce.
