Method :
Rinse and soak mung bean thread in
1/2 cup of stock until soft. Soak thread mushrooms until soft
and finely chop. Trim and section flowering Chinese
chives. Shred and gently stir fry ham. Blanch flowering Chinese chives
and green bean sprouts in boiling water together with oil and salt. Mix pork, dace, mushrooms, spring
onion and seasoning to make filling. Stir and slab the mixture onto the
work surface until firm and sticky. Chill for 1/2 hour. Wrap filling in mung bean thread
and place on a greased plate. Steam for 10 minutes. Remove and drain liquid from
steaming. Garnish with green bean sprouts,
ham and flowering Chinese chives. Bring sauce to the boil and pour
on top.
