Pig's Liver With Celery Recipes

Ingredients :

150 g celery

225 g pig's liver

2 dried black mushrooms

shredded ginger

shredded carrot

Marinade :

1/3 tsp ginger juice

1/3 tsp wine

2/3 tsp sugar

2/3 light soy sauce

2/3 tsp salt

1 1/2 tsp caltrop starch

dash of sesame oil

Sauce :

boiling oil

light soy sauce, pepper

Method :
  1. Wash celery, remove and hard strings and section.
  2. Mix with a little oil and salt.
  3. Finely chop small quantity of celery.
  4. Cut the stalks from the caps of mushrooms, soak until soft and shred.
  5. Mix with a little of oil and caltrop starch.
  6. Slice pig's liver.
  7. Wash, drain and mix with chopped celery and marinade.
  8. Arrange pig's liver on serving plate.
  9. Steam over medium heat for 5 minutes.
  10. Add sectioned celery and carrot.
  11. Steam over high heat for 3 minutes.
  12. Drain liquid from steaming liver.
  13. Add ginger and sauce.
  14. Serve.
