Method :
- Wash celery, remove and hard
strings and section.
- Mix with a little oil and salt.
- Finely chop small quantity of
celery.
- Cut the stalks from the caps of
mushrooms, soak until soft and shred.
- Mix with a little of oil and
caltrop starch.
- Slice pig's liver.
- Wash, drain and mix with chopped
celery and marinade.
- Arrange pig's liver on serving
plate.
- Steam over medium heat for 5
minutes.
- Add sectioned celery and carrot.
- Steam over high heat for 3
minutes.
- Drain liquid from steaming liver.
- Add ginger and sauce.
- Serve.
