Reddish Pork Balls Recipes

Ingredients :

225 g minced pork

1 tbsp finely chopped water chestnut

1 preserved sausage

38 g snow beans

Sauce :

boiling oil

light soy sauce

Marinade :

3/4 tsp sugar

3/4 tsp light soy sauce

1/2 tsp salt

1 1/2 tsp caltrop starch

pinch of pepper

dash of sesame oil

1 tbsp cold boiled water

Method :
  1. Remove hard strings from snow beans.
  2. Blend in boiling water together with oil and salt.
  3. Slice preserved sausage.
  4. Mix pork with water chestnut and marinade.
  5. Stir the mixture in one direction for about 5 minutes to make it sticky.
  6. Divide mixture into small portions and chill for 1/2 hour.
  7. Then knead into balls and arrange on plate.
  8. Top each ball with one slice of preserved sausage.
  9. Put the rest of sausage in the center of plate.
  10. Steam for 10 minutes.
  11. Add snow beans, steam for 1/2 minute.
  12. Remove and drain liquid from steaming snow beans.
  13. Add sauce, serve.
