Method :
- Rinse sour plums, remove pits and
finely chop.
- Mix with salted yellow bean paste,
garlic and shallot.
- Stir fry the mixture over low heat
until fragrant.
- Allow to cool, wash spareribs and cut into long
strips.
- Marinate for at least 1 hour.
- Arrange spareribs on a plate.
- Pour prepared sour plum mixture on
top.
- Steam over high heat for 10
minutes.
- Add red chili and Chinese parsley.
- Steam for 1 minute more, serve hot.
