Steamed Chicken Giblets With Broad Bean Paste Recipes

Ingredients :

4 chicken livers

4 chicken gizzards

75 g gluten

38 g sectioned spring onion

pinch of shredded red chili

1 1/2 tsp broad bean paste

2 slices ginger

2 sprigs spring onion

Sauce :

dash of sesame oil

dash of light soy sauce

Seasoning :

1 tsp salt

1 tsp sugar

2/3 tsp grated garlic

2/3 tsp grated garlic

2/3 tsp caltrop starch

2/3 tsp light soy sauce

dash of sesame oil

pinch of peppers

Method :
  1. Gently rub chicken livers and gizzards with coarse salt.
  2. Rinse and parboil with ginger and spring onion for a while.
  3. Drain well.
  4. Chop up and mix with marinade and broad bean paste.
  5. Wash and chop up gluten, place gluten onto dish.
  6. On top put chicken lives and gizzards.
  7. Steam over high heat for 8 minutes.
  8. Add sectioned spring onion and shredded red chili.
  9. Steam for 1 minute.
  10. Add sauce, serve.
