Steamed Chicken With Lily Flowers and Cloud Ear Recipes

Ingredients :

1/2 chicken (about 675 g )

8 g dried lily flowers

8 g cloud ear

12 g dried black mushrooms

6 red dates (cored)

1 tbsp diced spring onion

shredded carrot

Seasoning :

1 tsp oil

1/2 tsp caltrop starch

1/2 tsp sugar

1/3 tsp light soy sauce

Marinade :

1/2 tsp ginger juice

1/2 tsp grated shallot

1/2 tsp wine

1 1/4 tsp salt

1 1/4 tsp light soy sauce

1 1/4 tsp oil

1 tsp sugar

1 tsp caltrop starch

pinch of pepper

dash of sesame oil

Method :
  1. Wash, chop up and marinate chicken.
  2. Soak and trim dried lily flowers.
  3. Soak cloud ear until soft, wash and cut into florets.
  4. Soak mushrooms until soft and cut into strips.
  5. Finely chop red dates.
  6. Mix ingredients in (2) with seasoning.
  7. Arrange on dish, top with chicken.
  8. Steam over high heat for 12 minutes.
  9. Sprinkle with carrot and spring onion.
  10. Steam for 1 minute, serve.

Serves 4
