Steamed Fish Head Wrapped In Lotus Leaf Recipes

Ingredients :

1 big fish's head (about 600 g)

1 tbsp carrot strips

shredded ginger

shredded spring onion

shredded red chili

2 cloves garlic

1 fresh lotus leaf

Marinade :

2/3 tsp salt

2/3 tsp sugar

2/3 tsp light soy sauce

1 1/2 tsp caltrop starch

dash of sesame oil

pinch of pepper

1 tsp salted yellow bean paste

1 tsp grated garlic

1 tsp dark soy sauce

Method :
  1. Scald lotus leaf in hot water, rinse and wipe dry.
  2. Chop up fish head.
  3. Wash, drain and marinate.
  4. Mix with 1 tbsp of oil.
  5. Put fish head on lotus leaf.
  6. Add carrot, ginger and red chili.
  7. Wrap up and place in steamer or dish, steam for 10 minutes.
  8. Bring 1 tbsp of oil to the boil.
  9. Stir fry garlic until fragrant to form garlic sauce.
  10. Pour over fish head.
  11. Sprinkle with spring onion, ready to serve.

Serves 4
