Method :
- Scald lotus leaf in hot water, rinse and wipe dry.
- Chop up fish head.
- Wash, drain and marinate.
- Mix with 1 tbsp of oil.
- Put fish head on lotus leaf.
- Add carrot, ginger and red chili.
- Wrap up and place in steamer or
dish, steam for 10 minutes.
- Bring 1 tbsp of oil to the boil.
- Stir fry garlic until fragrant to
form garlic sauce.
- Pour over fish head.
- Sprinkle with spring onion, ready
to serve.
