Method :
- Cut onion into strips.
- Juice 1/2 lemon and slice the
other half.
- Mix 1/2 tbsp of honey and 1 tsp of
lemon juice together.
- Cut open quails, remove innards
and rub with coarse salt, drain.
- Marinate for at least 1 hour.
- Then mix with 1/2 tbsp of honey, a
little lemon juice and lemon zest puree.
- Place onion strips on base of
dish.
- Top with quails and sliced lemon.
- Steam for 15 minutes.
- Leave to cool and chop up (or
leave as whole).
- Sprinkle with Chinese parsley and
pour honey lemon juice on top, serve.
