Steamed Shin Of Beef With Dried Tangerine Peel Recipes

Ingredients :

1 honeycomb shin of beef (about 450g)

8 g cloud ear

4 g dried lily flowers

1/4 dried tangerine peel (soaked and shredded)

4 red dates

sectioned spring onion

Sauce :

boiling oil, light soy sauce

Marinade :

2/3 tsp ginger juice

2/3 tsp sugar

2/3 tsp light soy sauce

1/2 tsp salt

1 tsp caltrop starch

1 tsp oyster sauce

2 drops of lime juice or white vinegar

Method :
  1. Soak cloud ear and lily flowers until soft and wash.
  2. Trim, parboil and drain well.
  3. Stir in 1/4 tsp of finely chopped spring onion, 1/4 tsp of light soy sauce and 1/4 tsp of oil, set aside.
  4. Wash and slice shin of beef.
  5. Marinate for at least 2 hours.
  6. Mix beef, shredded tangerine peel, red dates, cloud ear and lily flowers together.
  7. Place onto serving plate.
  8. Steam over high heat for 6 minutes.
  9. Drain liquid from steaming beef.
  10. Add sauce, serve.

Serves 4
