Method :
- Crush red dates under the flat of
a knife.
- Remove pits and shred.
- Cut the stalks from the caps of
mushrooms.
- Soak until soft and dice.
- Mix with a little oil and caltrop
starch.
- Gut, scale, wash and wipe dry
fish.
- Brush thoroughly with marinade.
- Arrange fish, red dates and
mushrooms on serving plates.
- Steam over high heat for 7
minutes.
- Remove and drain liquid from
steaming fish.
- Sprinkle with ginger and spring
onion.
- Add sauce, ready to serve.
