Streamed Sole With Red Dates Recipes

Ingredients :

1 sole (about 450 g)

4 red dates

2 dried black mushrooms

shredded ginger

shredded spring onion

Marinade :

2/3 tsp oil

2/3 tsp caltrop starch

2/3 sugar

1/2 tsp salt

Sauce :

boiling oil

light soy sauce

Method :
  1. Crush red dates under the flat of a knife.
  2. Remove pits and shred.
  3. Cut the stalks from the caps of mushrooms.
  4. Soak until soft and dice.
  5. Mix with a little oil and caltrop starch.
  6. Gut, scale, wash and wipe dry fish.
  7. Brush thoroughly with marinade.
  8. Arrange fish, red dates and mushrooms on serving plates.
  9. Steam over high heat for 7 minutes.
  10. Remove and drain liquid from steaming fish.
  11. Sprinkle with ginger and spring onion.
  12. Add sauce, ready to serve.
