Method :
- Poach quail eggs.
- Remove shells and cut into halves.
- Wash, pat dry and mash shrimps.
- Stir in seasoning, pork and water
chestnut.
- Chill for at least 120 minutes.
- Parboil green string bean until
soft with oil and salt.
- Twist into rings and dab with
pinch of caltrop starch.
- Stuff with shrimp mixture and
eggs.
- Steam over high heat for 8
minutes.
- Stir fry garlic, add sauce and bring to the boil.
- Pour sauce over the cooked
ingredients, ready to serve.
