Beef Stock Recipes

Ingredients : |
|
1.5lb shin of beef, cubed
2 onions, chopped
2-3 carrots, chopped
2 celery sticks, roughly chopped
1 bay leaf
1 bouquet garni
4-6 peppercorns
3 pints water |
Method :

Place all the ingredients in a
large saucepan.

Slowly bring to the boil, and
immediately reduce the heat to a slow simmer.

Cover with a well-fitting lid and
simmer for 4 hours, removing any scum from the surface.

Strain the stock through a
muslin-lined sieve and leave to cool before refrigerating.
