Corn and Sweet Potato Fritters Recipes

Ingredients :

corn kernels

orange sweet potato, coarsely grated

small onion, coarsely grated

eggs

rice flour

curry powder

oil

Greek-style yoghurt

chopped fresh coriander leaves

oil, extra

finely grated lime rind

lime juice

thin strips of red chili, to garnish

Method :
  1. Combine the kernels, sweet potato, onion, eggs, flour and curry powder in a bowl.
  2. Heat 1.5 tbsp oil in a large frying pan.
  3. Using 1 tbsp of the mixture each time, form six rough patties and cook for about 5 minutes, or until golden.
  4. Drain on paper towels and keep warm.
  5. Repeat, making six more patties.
  6. To make the dressing, combine the yoghurt, coriander, extra oil and lime rind and juice.
  7. Heat the remaining oil in a frying pan and cook the chili over medium heat for 1 minute, or until crispy.
  8. Spoon the dressing on the fritters, garnish with chili and serve.
