Chicken with Bamboo Shoots in Red Curry Sauce Recipes

Ingredients :

1.5 lb boneless chicken breast

2 tbsp peanut oil

2 cloves garlic, chopped

1.5 tbsp red curry paste

2 tbsp fish sauce

2 cup coconut milk

2/3 cup chicken broth

1/2 tsp sugar

2-inch inner stalk lemongrass, slivered

1 can whole bamboo shoots, thinly sliced

6-8 fresh basil leaves, cut in strips

Method :

Thinly slice chicken breasts and set aside. In a wok or a larges skillet, heat oil and stir-fry garlic for 1 minute. Stir in curry paste and seasoning sauce and cook for 1 minute. Add chicken, pour over coconut milk, stock, sugar and lemongrass and cook, stirring well, for 2-3 minutes or until chicken is cooked. Add bamboo shoots and basil. Bring to the simmer and stir-fry for 1 minute more.

Serves 6
