Dom Yam Kung (Piping Hot Thai Soup) Recipes

Ingredients :

1.5 liter water

700g large prawns (deveined) or threadfin steaks (cut into pieces)

4 stalk lemon grass (thinly sliced)

8 lime leaves

125ml lime juice

60ml fish sauce

10-12 cili padi / bird's eye (lightly bruised)

6 mint leaves or 15 basil leaves

40g coriander leaves (optional)

4 stalks spring onion (thinly sliced)

salt and sugar to taste

Method :

Bring water in a large pan to the boil. Add lemon grass and lime leaves. Boil for 5 minutes. Stir in lime juice and fish sauce. Simmer for 5 minutes more. Add cili padi, prawns or fish, mint leaves, coriander leaves and spring onions. Season to taste with salt and sugar. Let soup simmer, covered, for a few minutes. Serve hot.
