Gaeng Leung Pak Tai (Southern Thai Asam Pedas) Recipes

Ingredients :

500g patin slices (or any fresh water fish)

750ml water

500g yam stalk (peeled and cut into 3cm sections)

3 tbsp fish sauce

sugar to taste

 

Blend the following to a paste:

10-12 dried chilies (soaked and drained)

2.5 cm turmeric

2 cloves garlic

1 tbsp dried shrimp paste

salt to taste

 

Mixed and strained the following:

125ml water

1 tbsp tamarind pulp

Method :

Add water to blended paste and bring to the boil. Put in yam stalk and cook for 10 minutes. Add tamarind juice and fish. Reduce heat and cover pot. When the fish is cooked, add fish sauce. Simmer for 10 minutes more. Season to taste with sugar. Serve with hot rice.
