Green Curry Beef Recipes

Ingredients :

3 tbsp peanut oil

1 clove garlic, minced

2 small Japanese eggplants, sliced 1/2 inch thick

1/4 lb quartered mushrooms

1-2 tbsp green curry paste (obtainable in Asian market/grocery)

1/2 cup coconut milk

2 tbsp fish sauce

1/2 tsp sugar

10 oz lean beef, thinly sliced

1/2 cup broth

3 Kaffir lime leaves, slivered

16 holy basil leaves

lime wedges

Method :

Heat wok, swirl oil around inside wok, add garlic, and stir-fry until lightly browned. Add eggplants and mushrooms and stir-fry until almost tender. Stir in curry paste, mixing well. Slowly add coconut milk and cook for a few minutes. Add the fish sauce, sugar, and beef, stirring until the meat is no longer pink. Stir in broth and lime leaves and simmer for 2-3 minutes. Remove from heat. Stir in basil leaves and serve immediately. Pass lime wedges separately.
