Lemon Grass Soup Recipes

Ingredients :

175-225 g

raw large prawns

vegetable oil

light fish stock

thick stalks lemon grass, finely chopped

lime juice

fish sauce

kaffir lime leaves, chopped

red chilli, seeded and thinly sliced

green chilli, seeded and thinly sliced

crushed palm sugar

coriander leaves, to garnish

Method :
  1. Put stock, onion, lemon grass, line leaves, line juice, garlic, chilies and galangal into a saucepan and simmer for 20 minutes.
  2. Stir in fish sauce and sugar.
  3. When sugar has dissolved, add noodles and cook for 1 minute.
  4. Stir in coriander.
  5. Spoon into warmed bowls and garnish with basil leaves.

Serves 4-6
