Mushrooms and Bean Sprout Recipes

Ingredients :

vegetable oil

fresh red chilies, seeded and thinly sliced

cloves garlic, chopped

shiitake mushrooms, sliced

bean, sprouts

cooked peeled prawns

lime juice

red shallots, sliced into rings

fish sauce

crushed palm sugar

ground browned rice

coriander sprigs, stalks and leaves finely chopped

Thai mint leaves, shredded

Thai mint leaves, to garnish

Method :
  1. In a wok, heat oil, add chilies and garlic and cook, stirring occasionally, for 2-3 minutes.
  2. Add mushrooms and stir fry for 2-3 minutes.
  3. Add bean sprouts and prawns, stir fry for 1 minute, then stir in lime juice, shallots, fish sauce and sugar.
  4. When hot, remove from heat and stir in rice, coriander and mint.
  5. Serve garnished with mint leaves.
