Method :
- In a wok, heat oil, add chilies
and garlic and cook, stirring occasionally, for 2-3 minutes.
- Add mushrooms and stir fry for 2-3
minutes.
- Add bean sprouts and prawns, stir
fry for 1 minute, then stir in lime juice, shallots, fish sauce and
sugar.
- When hot, remove from heat and
stir in rice, coriander and mint.
- Serve garnished with mint leaves.
