Spinach and Fresh Shiitake Mushrooms in Sake Recipes

Ingredients :

4 bags spinach (2-3 lb)

4 oz shiitake mushrooms

1 tbsp peanut oil

2 garlic cloves, thinly sliced

pinch of salt

1/3 cup sake rice wine

Method :

Preheat oven to 325F. Wash spinach and discard tough stems. Spin dry. Remove stems from mushrooms and discard. Wipe mushrooms thoroughly with a damp cloth. In a saucepan large enough to hold all the spinach, heat peanut oil over medium low heat, briefly stir in garlic slices, add spinach stirring to coat. Cover and steam briefly to wilt spinach. Transfer spinach to a lidded medium-sized heatproof dish. Arrange shiitake over spinach, and sprinkle with sake. Cover and cook for 45 minutes. Serve hot
