Stir Fried Prawns and Ginger Recipes

Ingredients :

cloves garlic, crushed

piece fresh root ginger, thinly sliced

vegetable oil

raw king prawns, peeled and deveined

red shallots, finely chopped

fish sauce

spring onions, thinly sliced

lime juice, to serve

grated zest 1/2 kaffir lime

lime juice, to serve

spring onions brushes, to garnish

Method :
  1. Using a pestle and mortar or small blender, pound or mix together garlic and ginger.
  2. In a wok, heat oil, add garlic paste and stir fry for 2-3 minutes.
  3. Stir in prawns and shallots and stir fry for 2 minutes.
  4. Stir in lime zest, fish sauce and 3 tablespoons water.
  5. Allow to bubble for 1 minute until prawns become opaque and cooked through.
  6. Stir in spring onions, then remove from heat.
  7. Serve in a warmed dish, sprinkled with lime juice and garnished with spring onions brushed.

Serves 3-4
