Method :
- Using a pestle and mortar or small blender, pound or mix
together garlic and ginger.
- In a wok, heat oil, add garlic paste and stir fry for 2-3
minutes.
- Stir in prawns and shallots and stir fry for 2 minutes.
- Stir in lime zest, fish sauce and 3 tablespoons water.
- Allow to bubble for 1 minute until prawns become opaque and
cooked through.
- Stir in spring onions, then remove from heat.
- Serve in a warmed dish, sprinkled with lime juice and garnished
with spring onions brushed.
