Thai Fish Cakes Recipes

Ingredients :

250g boneless fish fillets, chopped

4 spring onions, chopped

2 cloves garlic, crushed

2 tbsp chopped fresh coriander

1 egg

1 tbsp Thai fish sauce

2 tsp chili sauce

1 tsp soy sauce

1/2 tsp finely grated lime rind

1 tbsp lime juice

1/2 tsp chopped chili

1/2 cup rice flour

oil, for shallow frying

Method :

Process the fish, spring onions, garlic, coriander, egg, sauces, lime rind and juice, chili and rice flour in a food processor for 60 seconds or until finely chopped and mixed. With oiled hands, shape the mixture into small patties. Heat 1-2cm oil in a pan and cook the patties over medium heat for 2-3 minutes each side or until golden. Drain well and serve with sweet chili sauce, if desired.

Makes about 24

Dust the patties lightly in cornflour before frying to give a crisp finish.
