Vegetables With Sauce Recipes

cloves garlic, finely chopped
lean pork, very finely chopped
mange tout
crushed palm sugar
fish sauce
cooked peeled prawns, chopped
freshly ground black pepper
stalk lemon grass, chopped
piece galangal, chopped
coconut cream
ground roasted peanuts
tamarind water
fish sauce
crushed palm sugar
grated zest 1 kaffir lime |
Method :
- Cut aubergine into 4 cm cubes; cut
beans into 5 cm lengths.
- Put aubergine, beans and
cauliflower into a saucepan, add coconut milk and bring to the boil.
- Cover and simmer for 10 minutes
until vegetables are tender.
- Remove from heat, uncover and set
aside.
- Using a pestle and mortar or small
blender, pound or mix together shallots, garlic, coriander roots,
chilies, lemon grass, galangal and lime zest.
- Mix in 4 tablespoons liquid from
vegetables.
- Place in a small, heavy frying
pan, stir in coconut cream and heat, stirring, until oil is released
and paste is thick.
- Stir into vegetables with peanut,
tamarind water, fish sauce and sugar.
- Heat through gently for about 1
minute.
