Measure flour into a bowl. Mix in salt and
sage with a fork. Add shortening and cut in coarsely with a pastry blender
or two knives. Sprinkle in water, a little at a time, mixing lightly with
a fork just until all flour is dampened. Gather dough into a ball and
press together firmly. Divide into 2 equal parts and use to top pies as
directed in recipe.
