Heat oven to 375F (190C). Butter a 13 x 9 x
2-inch glass baking dish. Melt butter or margarine in saucepan. Sprinkle
in flour, 3/4 tsp salt and 1/4 tsp pepper and let bubble. Remove from heat
and add milk all at once. Add mustard and Worcestershire sauce and stir to
blend. Return to moderate heat and cook until thick and smooth, stirring.
Remove from heat. Stir in about 3/4 cup of the cheese.
Cook broccoli according to package
directions using the minimum time suggested. Drain and lay pieces in
prepared baking dish. Sprinkle with 1 tsp salt and 1/4 tsp pepper. Lay
turkey slices on top of broccoli in a single layer. Beat egg yolks into
cheese sauce and pour sauce over turkey. Top with tomato slices and
sprinkle them with the remaining 1/4 cup cheese. Bake 10-15 minutes or
until bubbling well. Turn on broiler to lightly brown top. Watch carefully
so that it doesn't burn. Serve immediately.
